Chipotle Bowl
I made a chipotle bowl. I baked boneless chicken thighs with smoked paprika, pepper, salt, and chili pepper. I then sliced the pieces and cooked them further on the skillet. I added that with sautéed onions, jalapeño peppers, and cilantro. Plus, I used left over pico de gallo, green salsa, red salsa, and added corn, beans, sour cream, and cheese. I put all of that over rice. It all turned out great. Many of the ingredients were left over from tacos that I cooked a couple of days prior.
